Slow Cooker BBQ Ribs

So why would you make BBQ ribs in a slow cooker? Well, maybe you don’t have the time to babysit a barbecue for hours, maybe it’s freezing cold outside, maybe you don’t have a barbecue, who cares.  This is a simple and painless way to get the great taste of BBQ Ribs with out the hassle of worrying about everything that could go wrong.  Just leave it up to your slow cooker.


Slow Cooker BBQ Ribs

Simple BBQ Ribs
Ingredients
  • 3 lbs Pork ribs
  • 2 liters Coca-Cola
  • The Dry Rub
  • 2 cups Brown sugar
  • 1 Tbls Garlic Powder
  • 1 Tbls Paprika
  • 1 Tbls Cayenne pepper
  • 1 Tbls Onion Powder
  • 1 Tbls Black pepper
  • 1 Tbls Salt
Instructions
  1. Combine the Dry Rub ingredients into a medium bowl and mix well.
  2. Thoroughly rub the dry ingredients into the ribs. Completely cover all of the ribs, front and back with the rub mixture.
  3. Place the ribs into the crockpot.
  4. Add the Coca Cola to the crock pot. (Do not pour directly on the ribs, that will wash off the rub.)
  5. *Sprinkle extra brown sugar into crock pot if desired.
  6. Cover and cook on low for 6 hours.
  7. Turn on ovens broiler 10 minutes before the crock pot is finished cooking.
  8. When they finish cooking, remove the ribs from the crock pot and place them on a lined (aluminum/tin foil or parchment paper) baking tray.
  9. Baste the ribs with barbecue sauce. Cover both sides of the ribs.
  10. Place under your oven's broiler for 3-5 minutes. Keep an eye on them, every oven is different. Don't let them burn.
  11. Remove from the broiler and let them cool for 3-5 minutes.

Ahh yes Oreo Balls (or Snowman balls lol).  These are the treats that give the response  “Oh My Gosh These Rock!” Yes they are THAT amazing…  Make them and tell me what you think– then pass them on to your friends and watch their reaction, like they just won the lotto!!! Get in the kitchen and make a batch! (and send me some too!)

 


Oreo Balls

Ingredients
  • 1 Package Oreo Cookies (14oz)
  • 1 Package Cream Cheese - softened (8oz)
  • 1 Package Almond Bark (20oz/24oz)
Instructions
  1. Place the entire package of Oreos in a food processor and blend until there are no more chunks.
  2. In a medium bowl, add softened cream cheese and the ground Oreos then mix until well combined.
  3. Make small balls out of the Oreo cream cheese mixture (smaller than a golf ball).
  4. Place balls on wax paper on a cookie sheet.
  5. Stick toothpicks in each ball.
  6. Place pan with Oreo Balls in freezer for 10 minutes.
  7. In a bowl, melt Almond bark (I use a microwave 20 seconds at a time, stirring each time. Be sure not to over cook the Almond Bark).
  8. Remove Oreo Balls from freezer and separate them from the wax paper.
  9. Holding the toothpick, dip each ball into the melted Almond Bark covering the ball completely, shaking off the excess Almond Bark and place back on the wax paper so they don't touch.
  10. Place covered balls back into freezer for 2 minutes.
  11. Pull out tray, remove toothpicks (twist as you pull them out as to not crack the coating).

 

Slow Cooker Beef & Broccoli

Here is another great meal made by my slow cooker.  Notice I said “made by my slow cooker”, that’s because I don’t really have to do too much to make a great meal.  In this recipe I will show you one of my favorites.  Beef & Broccoli, really easy, and really good.


Slow Cooker Beef & Broccoli

Another great slow cooker meal
Ingredients
  • 2lbs Beef Chuck (boneless, thin slices)
  • 2 heads Broccoli (florets only)
  • 3 Cloves Garlic (minced)
  • 1tbsp Sesame Oil
  • ¼c Brown Sugar
  • ¼c oyster Sauce
  • ¼c Soy Sauce
  • 1c Beef Broth
  • 2tbsp Cornstarch
  • ¼c Water
Instructions
  1. In a small bowl, add beef broth, oyster sauce, soy sauce, sesame oil, garlic, and sugar. Whisk to combine thoroughly.
  2. Place beef into slow cooker, pour sauce mixture on top of beef. Stir to coat the beef with the sauce.
  3. Place lid on the slow cooker and set slow cooker to cook on LOW for 90 minutes.
  4. Mix cornstarch and ¼c of water in a small bowl or cup.
  5. Add cornstarch mixture and broccoli to the slow cooker, mix to combine.
  6. Cover slow cooker and cook on HIGH for 30 minutes.
  7. Serve with rice and enjoy.

 

Italian Shrimp

The flavor is outstanding and refreshing.  If you are looking for a way to cook your shrimp, and you want it quick and easy with great flavor, this is it.  Very few ingredients and very little time is needed to prepare and finish this delicious dish.
Italian Shrimp

Simple shrimp appetizer.
Ingredients
  • 1 Stick of butter
  • 2 Lemons
  • 2 lbs pre-cooked shrimp
  • 1 pot Italian dressing seasoning
Instructions
  1. Melt the stick of butter in the pan.
  2. Slice lemons and lay them on top of the melted butter.
  3. Place shrimp evenly and sprinkle packet of Italian Seasoning over all the shrimp.
  4. Put in oven and bake at 350F for 15 minutes

Living in California gives me the opportunity to have a vast array of Mexican restaurants to choose from.  Many are absolutely amazing.  Some… not so much.  I have been fortunate enough to travel around the world and have had the pleasure of tasting many foods from different countries.  But few excite my tastebuds like the flavors of Mexico.  I seriously can’t get enough, I can eat Mexican food 5 times a week.  Is it always good for me, well probably not, but let me tell you, I don’t care.  This recipe, as basic as it is, is one of my favorites.  Technically its just a tortilla and some shredded chicken.  When you put those together in a deep fryer, dress it up with sour cream, avocado, and some salsa, you have a delicious plate of food.  You can have this as a main with beans and rice or just as an appetizer.  All I can say is this is simple to prepare and a dream to devour.  Give it a try and let us know how it turns out.


Chicken Flautas & Avocado Crema

Simple and tasty Mexican dish
Ingredients
  • Avocado Crema:
  • 2 Avocado's
  • ¼c white or brown onion
  • 1 Lime (juiced)
  • 6tbs Cilantro (sm handful)
  • 1 Garlic clove (minced)
  • ¼c Sour Cream
  • 1tsp Salt
  • Chicken Flautas:
  • 2-3 Large Chicken breasts (or a rotisserie chicken)
  • 8-10 Large Flour tortillas
Instructions
  1. Avocado Crema
  2. Add all ingredients to a food processor and blend until smooth. Refrigerate until ready to use.
  3. Flautas
  4. Cook chicken breasts until they are cooked through (alternative- pick up pre-cooked rotisserie chicken from grocery store)
  5. Shred chicken using 2 forks, remove skin and bones if needed
  6. Warm tortillas - wrap flat tortillas in wet paper towels, heat in microwave for 30-45 seconds
  7. Place roughly 2 tablespoons of shredded chicken in middle of tortilla and wrap tightly (like a cigar), secure with a toothpick
  8. In a heavy skillet or cast iron pan, heat ¼ inch of oil over medium heat (275*F)
  9. Add 2 flautas into heated oil and cook until crispy on all sides. Continue with remaining flautas.
  10. **Note - to keep flautas warm while finishing remaining flautas, place finished flautas on a baking pan in an oven heated to 200*F.
  11. Serve on a bed of lettuce with avocado crema, sour cream and salsa.
